After thinning-out the bunches on the plants and manual late harvesting, it is time for the fermentation in stell and, for the cru, refining in french oak barrels.

HARVESTING METHOD: hand-Harvesting with selection of the bunches

VINIFICATION: The grapes are harvested at the perfect degree of sugar and phenol content, then stripped and crushed and the must thus obtained is left to macerate and ferment in contact with the skins. At racking the wine is placed in stainless steel tanks at a controlled temperature, where making the malolactic fermentation before being bottled

NOTES ON FLAVOUR AND BOUQUET: Intense aromas, complex and fine enough. You perceive hints of red berry fruits like blackcurrant, cranberry and freshly cut grass, underbrush. There are also scented cyclamen and Rosemary. In the mouth the wine is dry, hot, quite smooth, refreshing, sapid with good tannins and intensity.

SERVING SUGGESTIONS: Grilled meats, boiled meats, stews of poultry and rabbit, roasts and medium aged cheeses.
